Why don't christians believe in Natural Selection?

I have been reading a book on the essential understanding of evolution. It is called Teach Yourself Evolution by James Napier. First I must say the book is very good and written for the nonscientist. That is important to me because I wanted a functional knowledge of Darwin's theory in a format I could readily access if the need occurs. This leads me to the meat of this post. Why don't Christians believe Darwin's theory on Natural Selection? Think of it this way. If Noah was the only one to survive the flood, where did the different races of people come from? Now I am not saying that I believe in the flood story (I don't) but being hypathetical for the sake of argument why souls Noah's children all have different physical characteristics? Anybody should be able to tell you peoples skin color is directly related to their regions positional relationship to the equator. The further from the equator the lighter ones skin. This is just one of the changes that happened to man over time. I know Christians don't like questions but what gives?
